Mackerel & Salmon

After our long series of travelling, we paid our old Coventry city centre a visit last Saturday. We stopped at the local Chinese store. We bought a pack of tofu, habhal kicap manis and chilli oil. While we were in that area, we stopped at Coventry Market. The vegetables, fruits and fish they sell there are cheap.

Plain Ikan bakar with kuah asam
We bought some vegetables, fresh mackerels, red snapper, fresh prawns and I even asked if they have 'fish heads'. (You see the mat saleh don't normally eat fish heads) Everything was less than £10.

Asam pedas kepala ikan

The fishmonger gave me two fish heads for free! They were huge! I have already made kari kepala ikan many days ago. And yesterday I made a typical Malaysian dish: gulai asam pedas. There was still plenty of fish meat on the head.

I also made (half) mackerel bakar dipped in kuah asam and ayam goreng too.

I rarely cook gulai asam pedas because cili kering and asam jawa are luxury items here, so yesterday was a special meal for us.



Family and friends, I have a few 'complaints' already about not being able to leave comments on this blog. Probably it's because I have upgraded this blog to beta blog.

I hope this is just a temporary problem by them. Otherwise I hate to think to revert to the old blogspot. Anyway, thank you for still paying a visit at mamasarah's blogspot.

PMS, I have been eating ikan goreng too. And the English variation that I like is the peppered smoked fish. Wah, makan dengan kicap asam sangatlah membuka selera.

My Algerian friend cannot stand the smell of fish, but I have managed to convert my inland Pathan friend into a fish-eating monster, teehee.

Pathan = org dari North Pakistan atau Afghan. Kuat makan kambing. Tak reti makan ikan sangat sebab dok kat kwsn gunung, jauh dari laut. Tapi orangnye lawa2. Yg perempuan le, yang lelaki saya tak tahu.

Teehee, my Pathan friend tu from the Pushtun area, North-West Frontier Province. Dulu region ni ade king sendiri before absorbed into Pakistan.

We went to Exmouth yesterday. I brought him sebab dia ni baik gila, and he had mentioned he had never see the sea or been to the beach. So semalam bawak dia tengok laut for the first time, main pasir etc. Happy dia. And when we passed, in the morning, a fishmonger, he wanted to buy loads of mackerel and sea brass. 'These are fresh' dia kata, unlike those kat Somerfield. But I told him, we still had a few hills to climb, a beach to visit and two more rail journey, so he said next time dia nak dtg beli ikan shj. When I showed him mussels and shell-less prawns and shell-less crabs, dia geli geleman tgk isi dalam tu yg memutih dan yg menguning. Teehee...

To my experience, org Pathan not only good-looking, but also religious and faithful, unlike the Pakistani Punjabis. The latter sweet talk all the time, and when the opportunity comes, stab you at the back.

isk... if letak jadi asam tumis belacan because the belacan aroma dominates. if tak letak... the smell or taste from daun kesom or bunga kantan dominates(kalau letak). thats why asam tempoyak kuala lipis is without the bawangs.... nak tempoyak aroma menusuk kalbu.

selalunya belacan guna utk sambal belacan sahaja. amat jarang masuk dlm masakan. (malunya, sbb bukannya tahu sgt bab masak ni)

Kawe baru kehabisan belacan. For that oh-so-ever-tempting aroma like that of malachan, kawe use Thai fish sauce (manyak murah, 20pence for 200 ml bottle). Jalan jugaks.

Kawe terpaksa bubuk fish sauce sebab no bunga kantan, no daun kesum, tu lagik kira luxury itemlah.

Kawe tak pandai masak macam Mama Sarah. Lagilah kawe sibuk skrg ni, masak seminggu sekali jek. (Don't ask me what I eat the rest of the week). Kesian OK. Kawe mesti belajar masak dengan lebih rajin lagik.

Bagus org Pathan ni. So dua-dua lelaki dan perempuan lawa, tak macam Swedish, perempuan stunning but the men oh my God. Rasanya perempuan lawa sebab the raids they used to do zaman Viking kot, haha.

mama sarah...kalau macam tu..saya laagi tak pandai masak..sebab i originally thought that for asam pedas (maybe johor version), belacan is a must. ada daun kesum laagi la sedap, MasyaAllah..bau hanyir ayam pun hilang kan(n maybe hanyir ikan keli or ikan ape yang famous kat temerloh tu..ikan patan?)..adoii..banyak vocab pahang dah hilang ni.

ahaa..baru tanye syeikh google tentang ikan temerloh...keluar 'patin'..thats it!

saya baru dapat tahu,letak cekur dalam sambal pun sedap- sambal kacang especially.

fm Loooonng ago when i was travelling to (can't remember, prob nottingham?) i thought i saw cikgu khamis's daughter on a train. tapi tak tegur sebab takut salah orang.

Anak cikgu khamis yang i kenal was one/two year my senior in school. nama dia... errr nurlida ke? (i think i'm creating her name since u said 'kak ida') but i remember anak cikgu khamis yang i remember was petite, very pretty and fair.

i used to be a prefect in std 5 and dapat wakil sekolah for netball - tapi semuanya for a short while je sebab ikut family ke Lancaster.

I think I met either Juraida or Juraina (?) at Marriot,Putrajaya 3years ago for a workshop, and she was expecting at that time (baby boy/girl?)..If either the Ju is reading...maybe bole tau yang mana saatu ya..muka lebih kurang je serupa..

Yep, he is quite a chef. And true to his rural Pathan highland background, he kneads and makes his own roti and nan - on our very own stove that is!

If the Pathan is quite a chef, then the algerian is a real chef. I have had makhbud aSli (that is: original), tajine, harira and coucous from him.

The other country that have both sides lawa2 is Syria. Like the Pathan, Syrians are hybrid of many races over thousand of years. Most Shaami are not Arabs, but fusions of local people (Phoenicians, Moabites etc) who had adopted Arabic and Arab custom.

I have to disagree on the Swedes. On the other hand, I do find Greeks and Hungarians and Bulgars, in order of ratings, not very fine-tuned, both sides of them. The Greeks especially not very amiable to strangers...

Hehehe beli kat See Woo supermarket not far from Greenwich. Supermarket besarrrr dan very entertaining, sebab macam2 ada and quite cheap. Also they ahve a massive live seafood section, I spent 15-20 minutes just ogling the fish/crustaceans! Also witnessed a live lobster fight. Hehehe memang masa beli tu adale 2 bulan expiry date dia, hahaha.

Entahlah saya pun tak tahu all the subtleties of the kuah asam family. Yang saya tahu, janji sedap boleh telan sudah... La ni dah kureng reti masak Melayu (macamlah reti sgt to begin with!) Sekarang main hotch potch aje, masakan style 'hantam sajelah Labu'... Hari ni pun makan mashed potatoes with baked chicken. Senang semua main campak aje tak payah nak tunggu/potong bawang etc.

Bagus orang lelaki tahu memasak. Kalau isteri penat memasak husband nak take over pun tak risau. I think all men should learn how to cook too.

Orang Algerian friendly dan suka senyum, dan yg lelakinya suka kahwin foreign ladies. Sampling Swedes yang saya buat tertakluk kepada Stockholm aje.. and other famous male Swedes in the media (Abba, Goran-Eriksson) don't really convince me otherwise. I like Moroccan ladies too, again the men I am not too sure about. I have a better impression of Hungarians then I do Greeks, but then again I only know 2 Hungarians. The Syrians I have seen so far memang good-looking. Diorang punya style of cooking pun sedap. Hmm come to think of it masakan Afghan pun sedap gilers. The best I had was at Kabuli Restaurant in Southall. Apparently famous sangat sampai Shah Rukh Khan pun makan kat situ... hahaha not that it means anything.

Hmm banyaknye tempat makan dan tempat2 lain yang tak pergi lagi dgn OK. Hmm...

mama Sarah n KKL - a dear friend of mine always add in belacan (even a pinch of it) in many of her cooks, mostly sambal type or other goreng2gorengan one..mcm sayur goreng, mee goreng n similar...alhamdulillah..sedap je..i think its due to intrinsic aroma belacan can provides

another dear friend of mine kata..selawat je banyak2 (it is nothing without selawat- how miracle), berwudhu' kalau boleh time masak tu, make correct intention...InsyaAllah semua jadi sedap katanya...

talking about other races' faces cun or not...wondering pulak saya...org melayu jatuh tangga ke berapa ye?

pulun baca Surah Yusuf banyak2 laa time ngandung tu...:-P or sebelum ngandung lagi both parties yea!

I pernah tengok kawan yang vegetarian happily makan sayur kangkung... without knowing dalam tu ada belacan, so mana tang vegetarian tu tak sure pulak...

Hehehe it is not about ranking as such, more about marvelling at the way Allah created humankind. Yang penting the Best of Creation (saw) of course nombor satu. Part of the reason I like it here in UK is that I get to meet diverse types of Muslims. Kalau nak jugak buat ranking, I think is a pointless exercise. Beauty is in the eye of the beholder anyway...

If you like Afghani cuisine, you might like Persian. They are after all cousins. There is one Persian kebab on Edgware Road that is good where I, in the past, normally brought Malaysian VIPs to eat. I have not been there for at least 3 years. Not sure if it is still around.

i have written a super long comment and reply, but decided to delete it. But in summary saya rasa agak tidak wajar utk melabel kecantikan sesuatu kaum kerana itu adalah hak Allah swt utk menentukan segalanya.

fm a pinch of belacan in every recipe. menariknya tu. ni serupa dgn secret orang pantai timur a pinch of sugar in every recipe :)

:) To me admiring people is just like admiring any creation of Allah. Macam admire anak2 orang... (today saya nampak 2 orang budak kecik yang sungguh-sungguh menawan hati... masyaAllah) But then again, to each his/her own. *wink* Benarlah tu FM, baru at macro level, belum lagi masuk bab micro or the subtleties yang our senses fail or masih belum dapat appreciate... BTW FM, which particular selawat do you normally recite while cooking? Or do you do a medley? I really like those cakes you gave us, especially the banana one yang sungguh lekas disapu licin...

Kabuli Restaurant tu buat delivery.. malangnye tak sampai ke rumah saya... sedeynye. Another great Afghan Restaurant is near Mill Hill Broadway Rail station.. nama restaurant tu inappropriately is Bambino. Actually that was the best Afghan food I ever had.

On the subject of good food, pernah try Nasi Bukhari? Sedapnye... the version I had was Saudi. Hari tu kitorang try buat Ras Malai (Indian dessert) guna packet Laziza. Dengan konfidennye kitorang tore open the packet yang bertulis 'recipe inside' to find that there was no recipe. Tipah tertipu? Last2 main hantam sajalah Labu... jadilah bubur instead of Malai balls. Tapi rasa dia adalah sikit-sikit. Atau bak kata kak Waheedah Ras Malai telah bertukar menjadi Kheer.

I love Persian. Try Alounak near Bayswater, across the road from Khan's (a bit further up). Had a lovely anniversary meal there with OK couple of years back. But I dislike the Edgware Road kebab houses. We went to one of them for our 1st anniversary, substandard service made us leave. In the end, Lolita kebab di Paddington juga yang menjadi pujaan.

Kepala ikan ... kalau kat negeri Omputih memang ada chance dapat free. I pun pernah dengan muka tak malu pergi kat seafood section and minta fish head. I guess they think entah apalah these weird people are eating. But rather than throw them away, they'll give to you for free.

nasi beringin di Muar dulu kalau tak silap, my mum beli di Jalan Sayang. On the way to Muara. Warung tu ada jual nasi lemak berlauk. zaman dulu famous lah sotong yg tebal tu.

oh satu lagi restaurant nasi beringin ialah di bus station. tak tau lah ada lagi ke tidak.

syikin terima kasihlah kerana bersusah payah meninggalkan jejak incredible hulk tu. sorrylah, tak sangka blog beta ada problem kecil mcm ni.

anyway, resepi asam pedas saya yang tidak seberapa.

7-8 btg cili kering
1 bawang besar
1 sudu kecil kunyit serbuk (kalau guna kunyit hidup lagi baik)
asam jawa
ikan
daun kesum

blend cili dan bawang. kemudian tumiskan. campur kunyit. tabur sedikit gula. kemudian tambahkan air asam jawa.

last sekali ikan dan garam. bila dah nak masak tu masukkan daun kesum.

Begitu aje asam pedas simple saya. (malu nak cerita)

Queen tu first time saya minta fish head. hehe. asyik dgr postgrad di sini beli ikan di pasar.

saya pun fikir yang sama! dan saya fikir mesti diaorang kata; ni orang miskin tak de duit (or kedekut) nak beli ikan ni!

nasi beringin kat bus stop Muar tu..MasyaAllah tuan empunye nye pemurah, tiap2 tahun, 29 Sya'ban..mesti dia bagi free sesape nak makan..sempena penutup musim makan siang, dan pembuka bulan Ramadhan...

Hehehe ala Mama Sarah suka merendahkan diri. Tunduk padi.. berisi. Saya suka makan home cooked food. Janganlah malu nak kasi saya makan... luas tapak tangan perut kosong saya tadahkan... hehehehe. Mama Sarah masak yang Mama Sarah rasa paling simple tu pun pada saya sudah cukup lazat. Rezeki jangan ditolak.. hehehe...

Sedapnya asam pedas tu... (sambil baca resepi tu saya dah bayangkan baunya, rasanya.. )

Kepala ikan free??? Hehehe sini kepala ikan pun ada harga jugak, tapi dalam 50p-1 pound for a few fish heads. Bolehlah kan.

Alhamdulillah mampu jugalah nak eat out once a month. Masa mula2 dtg sini tu tak sanggup juga, tapi bila sekali sekala tu seronok pula. And dpt appreciate makanan style org lain pulak.

Sekarang tengah cuba mengosongkan lemari dapur tu. Banyaklah resepi pelik2 yg keluar... hehehe..

mama sarah - tersenyum lebar saya baca email PMS (mesti penat susun ayat ye)..no worries! saya ni kata je nak bertandang 'raya kot'..tak tentu lagi syawal tahun bila ..1427/1428..or 1429? :-)..kalau umur panjang.

KKL & DITH - pasal makan kat restoran...saya ada cerita 'menarik', kalau KKL bole crita sampai ke tulang..(kelakar DITH ni), InsyaAllah, I could reverse the effect (read:sampai tak lalu makan di restoran :-p..esp restoran M'sia) wallahua'lam
